  • This week's balanced dinner idea included grilled cheese triangles, chicken noodle soup with Scrabble Cheese-It's on top (they got their initials!), cherry tomatoes, fresh sliced pears and a few left over Easter Jelly Beans for a treat. They loved every bite!!!!

  • This week's family balanced dinner idea is beef and bean tacos with cheese, sour cream and cheery tomatoes. A wedge of Queso Fresco cheese, fresh strawberries, Spanish rice and steamed asparagus. Delicious dinner and well received by the kiddos!

    I think dinners, even for kids, taste better and are appreciated more when the presentation is unique. Presentation is everything!!!

  • The topic for May's photo challenge for the Memory Journalists team is quite simply....color. Our first entry was taken with an iPhone and played with effects in the be Funky app. Our contestant says, "I love the color of the sky fresh after a storm."

  • I'm excited to share Teresa's latest family fun balanced meal. According to Teresa, "I went to a Japanese store this past weekend and got some fun stuff to use with our dinners. Food picks. Tiny silicone cups for sauces. Some other cool stuff too that we will use later. We had Baked chicken tonight, with steamed rice and broccoli, cauliflower, orange and yellow carrots. Sliced fresh pears with sprinkles and our new fun food picks! Everyone also got a little silicone cup with soy sauce for their rice and a few Hello Panda cookies for a treat.

    I've made it fun with the sprinkles, silicone cups, food picks etc. So they like it all as much as I do. I'm always in the lookout for new things to add in. They are also enjoying going to the grocery store with me and choosing some new things to use as side dishes.

    Since I started doing these dinners a few weeks ago I've heard numerous times by mom friends the same things "I don't have time for all of that!" or "That's so much effort just for dinner." What I have found about doing our "fun" plates is that yes it may take me an extra few minutes to slice fresh fruit, use cookie cutters to cut food into shapes (coming soon) or to wash 5 silicone baking cups and food picks by hand every night. But at the end of the day I know that my kiddos had a very yummy, pretty healthy, big dinner. So it's worth the extra few minutes for them. My only regret is that I didn't start this years ago."

  • Teresa's latest family balanced meal included yummy teriyaki chicken, steamed rice with a bit of teriyaki sauce. Steamed broccoli cauliflower and orange and yellow carrots. With a silicone flower baking cup filled with applesauce and....Yup...you know it....Sprinkles!
